2 cups cooked brown rice
1 (8 ounce) can tomato sauce
Texas Pete Hot Sauce
1 1/2 to 2 cups milk
10-12 ounces cream cheese
4 cups mixed vegetables (fresh or frozen,
steamed lightly)
1 large coarsely chopped onion
black pepper
shredded Cheddar cheese
slivered almonds
Put cooked rice in long baking dish; add tomato sauce and mix well. Sprinkle Texas Pete on top to taste. Combine milk and cream cheese in large sauce pan. Heat on low until well mixed being careful not to scorch milk. Steam vegetables and onion together. Drain well. Add steamed vegetables to cream cheese mixture. Add generous amounts of black pepper. Mix well. Layer this mixture over rice. Sprinkle shredded cheese on top and sprinkle almonds on top. Bake in 350 degree oven until cheese melts. Serves 12.
